Galatopita

Last year my youngest daughter and I had some fun filming the making of one of my mother’s family favourite recipes. Galatopita is a milk pudding that is prepared on the stove top and then baked in the oven. It is pudding deliciousness and the best part is scraping the baked on edges off the baking dish to get the crunchy bits!

Beautiful ancient Olympia, and the meaningful and symbolic lighting of the Olympic Torch. My family’s origins is from Pyrgos Ilias that is home to Olympia, so this has that extra special meaning for me.

I’ve been busy in the kitchen and decided to make almond milk. Some time ago, my friend AJ had explained to me just how simple it was.

Almond Milk Deliciiousness

It was on my list of things to try out and so on Sunday afternoon whilst waiting for my daughter to fly back from Europe, I did just that.

The result was a delicate and delicious homemade almond milk that tasted like it had come from heaven.

It’s lovely unsweetened (suits my taste buds), but  of course if you like a little sweetness, then add as much sugar as you like. Pure vanilla essence, or a dash of ground cinnamon can be added too, making it just that little more exotic!

Here is the recipe:

In a glass bowl add 1/2 cup almonds (skins on), 1/4 teaspoon salt, and 1 cup of boiling water.

Leave for 10 minutes to soften.

Remove skins from almonds, place in a sieve and rinse thoroughly.

Place the blanched almonds in a blender with 2 cups of fresh cold water, and blend until the almonds have been ground up.

Drain the mixture through a sieve that has been lined with muslin.

The result is silky almond milk that is perfectly divine.

I placed the ground almond pieces from the cloth into a bowl, added 1/4 cup soaked raisins, and 1/4 teaspoon of ground cinnamon. Mix through gently and  serve as a side sprinkling of deliciousness with the almond milk.

Taste of Greece Dinner – The Blue Zones – 17 May 2016

An amazing bunch of people joined in the celebration of the Greek Lifestyle at the Taste of Greece Dinner with guest speaker Dr Evangeline Mantzioris discussing the Blue Zones and in particular why the people from the island of Ikaria enjoy health and longevity. tog dinnerThese long-table dinners for up to 25 people allows for shared learning over amazing Greek food starting with dips and pita bread, spanakopita, saganaki cheese, local pan fried calamari, melt in your mouth souvlaki, and a glass  of either white or red Greek wine, loukoumades for dessert, followed by tea or coffee, and of course great company. I’m more than happy to discuss catering for vegans and vegetarians too!

The dinners are interactive with much discussion and sharing of knowledge and ideas, whilst exploring meaningful themes, and infused with lots of laughter and fun!

I’ve been told recently, that my Taste of Greece dinners are now referred to as the ‘new blue zone’ – a place for social interaction, learning, fun, food, wine, laughter, connections and meaningfulness. Such a compliment!

As part of my personal philosophy of giving back, each guest went home with a gift bag and a lucky lady won an amazing $100 luxury hair voucher that was generously donated by my beautiful friends at Yots Hair, King William Road, Hyde Park, and a lucky gent won an amazing bottle of Coriole wine.

Today has just been one of those amazing days, and I’m feeling deeply grateful for those who have joined in the celebration of my book Greek Life.

This afternoon I attended an event (not one that I organized), but what was so remarkable and unexpected was that some of those who were there have attended my Taste of Greece dinners and this inspired them to come along, bring their friends, and to bring their copies of my book Greek Life to let me know just what it means to them!

I could only have imagined the positive and beautiful influence that Greek Life has created. I’m so deeply thankful for the opportunity to have met so many amazing people both Hellenes and Phil-Hellenes. Thanks for the love!

Okay, I just have to share this!

So you can imagine my surprise when I discovered that my book Greek Life has its own Google advert on the right hand side of the screen.

This might not be a big deal for many of you reading this, but for a humble self published author who has put her heart and soul into bringing Greek Life literally to life…I’m joyfully surprised!

 

Let me take this opportunity to thank you all for your support on the journey so far. I am excited about what the future holds, and as things move forward I promise to keep you in the loop.

Greek Life – get in touch with your inner goddess!

I’m feeling the love from Business Chicks. I’ve been a premium member for some years now and the opportunity to discuss, to inspire and feel inspired, to network with other wonderful women, and to learn from the amazing speakers has been rewarding in more ways than one. Each time I leave an event I feel fuelled with what is possible and any doubts of impossible is replaced with I’m possible!

Loving the feedback

I’m simply loving the feedback from my readers of Greek Life. Here’s one that pretty well sums up my vision for Greek Life. I couldn’t have said it better!!

‘I had the pleasure of attending a book reading and meeting the lovely Author of Greek Life , Eugenia Pantahos. I sat listening to her stories of life growing up in a Greek household in the Diaspora, and it hit me now profoundly linked and similar our lives and experiences are.

Greek Life – the perfect book to learn about Greek culture and traditions

For a Greek family cooking , and eating with others is a huge part of our culture and heritage. It is also Linked to our sense of Philotimo.

Philotimo is a Greek word that is without definition, but impacts the world beyond imagination. The word philotimo comes from the Greek root words “filos,” meaning friend, and “timi,” meaning honor. When Greeks have food , there is life and kefi , what we have in our homes is always on offer to others , no matter how much or how little we have.

Greek Life began as an idea to collaborate into some sort of book format Eugenia’s recipes , and those of her mother. Something to pass onto her three daughters , as well as other family members.

With that idea she formed a beautiful collection of recipes , marking every occassion in the Greek Calendar. Honouring every tradition of the rich Hellenic Culture . Something I for one value greatly and I know future generations will benefit from her explanations , simple recipes and stunning photographs !

Each section of the book starts with a philosophy & makes reference to that seasons celebrations. Each recipe has its own ‘life ‘ and explanation , so you as a reader can understand and appreciate the Greek traditions and customs behind the celebration.

You will find everything from ‘Wedding Bread ‘ to ‘koliva’ in this book , and even references to certain plants and greens we find in our gardens that are used in our cooking and salads.

With Greeks as we know , we don’t really care what you do , but rather ‘ where are you from ?’ . I was curious given I recognised Eugenia’s surname as my mothers relatives from her village. I finally mustered up the courage to put my hand up asking a question that led to where her in laws descended from , and it was indeed my Mothers village ! I so love this connection with Greeks.
Greek Life is so much more than a cookbook, given so much of Eugenia’s life and family are intertwined with it. It is also a wonderful reference for Greek Customs and way of life. It sits proudly on my coffee table , thank you Eugenia for writing such a beautiful Anthology for us to pass on to our children. – Eleni Tsemtsidis
