Braised Chickpeas

Welcome to Greek Lifestyle,

I love sharing new recipes with you, and I think this one is going to be a new family favourite!

Chickpeas

A slow cooked delight of caramalized onions and buttery chickpeas.

This chickpea dish is equally delicious and nutritious with thinly sliced caramelized onions that add a certain sweetness to the buttery chickpeas. A slow cooked delight infused with a touch of earthy rosemary and aromatic bay leaves harvested from my garden.

Unless you grow your own bay leaves, or have family,  friends or a generous neighbour that gift you some, you’ll never know what you’re missing out on. The flavour is deeper and more aromatic and these air dried leaves truly bring your dishes to life!

Chickpeas are a great source of protein for vegetarians, vegans, and for those observing lent. So now is a great time to enjoy the healthy and nutritious benefits of adding legumes to your diet, if you don’t already do so.

Serve with fresh continental style bread and a simple side salad of cos lettuce drizzled with extra virgin olive oil, a splash of white vinegar, and a sprinkling of dried mint. A perfectly fresh salad to accompany the richness of the braised chickpeas.

INGREDIENTS

1/4 cup good quality olive oil

1 brown onion, thinly sliced

2 tbsp brown sugar

1 tbsp white balsamic vinegar

2 tbsp chopped rosemary

3 bay leaves

1 can chickpeas, or equivalent fresh chickpeas soaked overnight, and drained

2 1/2 cups boiling water, from the kettle

Salt and pepper, to taste

METHOD

Gently heat the olive oil in a heavy based saucepan, and add thinly sliced brown onions.

Cook slowly over low heat for approximately 10-15 minutes until onion is soft and has collapsed.

Stir in sugar and balsamic vinegar to deglaze the pot.

Add rosemary, bay leaves, chickpeas, and hot water.

Bring to boil, and then reduce to simmer, until chickpeas are tender and liquid reduced.

Season according to your taste.

Enjoy!

Galatopita

Galatopita

Last year my youngest daughter and I had some fun filming the making of one of my mother’s family favourite recipes. Galatopita is a milk pudding that is prepared on the stove top and then baked in the oven. It is pudding deliciousness and the best part is scraping the baked on edges off the baking dish to get the crunchy bits!

The recipe can be found in my book Greek Life, that is currently available on Amazon as an eBook. Get your copy here.

If you want to have a little sneak peak at this fun little episode…here’s the link!  But, be sure to put the volume down on your speakers first…the exciting Greek music might give you a startle!

Lighting of the Olympic Torch

Lighting of the Olympic Torch

Beautiful ancient Olympia, and the meaningful and symbolic lighting of the Olympic Torch. My family’s origins is from Pyrgos Ilias that is home to Olympia, so this has that extra special meaning for me.

Almond Milk deliciousness

Almond Milk Deliciousness

I’ve been busy in the kitchen and decided to make almond milk. Some time ago, my friend AJ had explained to me just how simple it was.

Creative in the kitchen, homemade Almond Milk

Almond Milk Deliciiousness

It was on my list of things to try out and so on Sunday afternoon whilst waiting for my daughter to fly back from Europe, I did just that.

The result was a delicate and delicious homemade almond milk that tasted like it had come from heaven.

It’s lovely unsweetened (suits my taste buds), but  of course if you like a little sweetness, then add as much sugar as you like. Pure vanilla essence, or a dash of ground cinnamon can be added too, making it just that little more exotic!

Here is the recipe:

In a glass bowl add 1/2 cup almonds (skins on), 1/4 teaspoon salt, and 1 cup of boiling water.

Leave for 10 minutes to soften.

Remove skins from almonds, place in a sieve and rinse thoroughly.

Place the blanched almonds in a blender with 2 cups of fresh cold water, and blend until the almonds have been ground up.

Drain the mixture through a sieve that has been lined with muslin.

The result is silky almond milk that is perfectly divine.

I placed the ground almond pieces from the cloth into a bowl, added 1/4 cup soaked raisins, and 1/4 teaspoon of ground cinnamon. Mix through gently and  serve as a side sprinkling of deliciousness with the almond milk.

Simply Amazed

Simply Amazed by the love shown to me today!

Full of thanks and gratitude

Full of thanks and gratitude

Today has just been one of those amazing days, and I’m feeling deeply grateful for those who have joined in the celebration of my book Greek Life.

This afternoon I attended an event (not one that I organized), but what was so remarkable and unexpected was that some of those who were there have attended my Taste of Greece dinners and this inspired them to come along, bring their friends, and to bring their copies of my book Greek Life to let me know just what it means to them!

I could only have imagined the positive and beautiful influence that Greek Life has created. I’m so deeply thankful for the opportunity to have met so many amazing people both Hellenes and Phil-Hellenes. Thanks for the love!

If you’re interested to learn about my events email me at jeanie.pantahos@bigpond.com and be the first to be in the know, and to join in the celebration that is Greek Life!

Wow! Greek Life on Google Search

Okay, I just have to share this!

As part of my commitment to continued business improvement it’s important for me to measure data to enable me to make informed decisions.

When Greek Life appears on Google right hand side ads!

When Greek Life appears on Google right hand side ads!

So you can imagine my surprise when I discovered that my book Greek Life has its own Google advert on the right hand side of the screen.

This might not be a big deal for many of you reading this, but for a humble self published author who has put her heart and soul into bringing Greek Life literally to life…I’m joyfully surprised!

Let me take this opportunity to thank you all for your support on the journey so far. I am excited about what the future holds, and as things move forward I promise to keep you in the loop.

I’m in the process of finalising the second print run (wow…did I just type that?) . So, for now if you wish to get your hands on a copy that is hot off the press be sure to email me at jeanie.pantahos@bigpond.com with the subject line ‘Order for Greek Life’.

Enjoy your day! xox
